Homemade cranberry sauce with a twist

Even when using recipes - I just have to invent something that's uniquely mine, to adjust ingredients and taste to my preferences.


Here's the story about inventing a different kind of homemade cranberry sauce.


About a year or so ago I found this really great recipe how to cook cranberries into delicious sauce. I used the original recipe a few times and the sauce was great: easy to make and tasty. The only thing I have a problem with is that it calls for a lot of sugar (which I try to eliminate from my diet) and orange juice (which is acidic so it's also on my "stay-away list").


That's why I cooked my newly invented sugar free cranberry sauce by replacing sugar with agave syrup and orange juice with grapefruit juice...

... and my 2008 Thanksgiving cranberry sauce recipe is as follows:


* 12 ounces cranberries
* juice of a medium-sized grapefruit
* approximately 1/2 cup of agave syrup*


Directions:

Cook cranberries in grapefruit juice and agave syrup in a medium size pan over medium heat for about 10 minutes (cranberries need to pop). Remove from heat, place in a bowl and let the sauce cool and thicken.


If you like your cranberry sauce more jellied, mash cooked cranberries with a fork.


* The quantity of agave syrup is approximate because the taste will depend on the size and the sweetness of the grapefruit you use. However, with using agave syrup as a sweetener it's easy to add more, even after the sauce cools down.


And the most important thing about this recipe is that it's good for everyone, does not contain any alcohol or any artificial ingredients.

Here's a little secret, so obvious that most people don't even see it: Lemon Basil is a perfect match with all the beverages and dishes that we usually use the lemon or lime with:

  • all kinds of salads
  • refreshing beverages
  • fish
  • pea soup

How vitamin C in fruits varies

It's important to understand that the content of vitamin C in fruits varies in different cultivars of the same kind of fruit as well as with the level of ripeness of the fruit.

Sometimes vitamin C content of certain fruit is higher when that particular fruit is still slightly immature, and declines as the fruit hits peak ripeness.

With other fruits, the process takes opposite direction: it rises with increasing ripeness.

Consequently, we might come across surprisingly wide variation in results for vitamin C content between different investigators - because they were testing fruit at different stage of maturation or they tested a different variety.

Fruits that increase vitamin C with maturation:

  • jujube
  • cherries
  • blackberries


Fruits that are losing vitamin C with maturation:

  • camu camu, fruit of shrubby tree of the Amazon with the highest recorded levels of vitamin C of any fruit
  • kiwi

Vitamin C content in live foods also decreases with storage; cool-storage is no exception.

Commercially grown fruits are picked green and their overall nutritious value is more or less poor.

Although, the simple truth is that chives complement just about any other flavor except sweet.

Some ideas for the foods that benefit greatly from (in the last minute) added chives: fish and shellfish, poultry, veal, cheese and creamy sauces, eggs and lots of vegetables like: artichokes, asparagus, carrots, cauliflower, corn, onions, potatoes, spinach, peas, tomatoes and others.

Chives contain sulfur-rich oil (found in all alliums) which gives them flavor and medicinal virtue of being antiseptic and to lower blood pressure. Since chives have less sulfur oil than larger alliums, they don’t have much medicinal use.

"The Hawaiian word for pineapple is halakahiki, which means “foreign fruit.” It is believed that pineapple first originated in Paraguay or Brazil. Carried aboard 15th and 16th century trade ships, pineapple was soon found growing as far away as Mexico, Australia, China and India. Christopher Columbus brought pineapples home from his travels in the “New World,” and they quickly became a gourmet fruit throughout Europe.

. The plant is a bromeliad (family Bromeliaceae), a short, herbaceous perennial with 30 or more trough-shaped and pointed leaves 30–100 cm long, surrounding a thick stem. The leaves of the Smooth Cayenne cultivar mostly lack spines except at the leaf tip, but the Spanish and Queen cultivars have large spines along the leaf margins. The fruit was named "pineapple" because of its resemblance to a pine cone. The native Tupi word for the fruit was anana, meaning "excellent fruit". This word became the source of the word ananas, which is the word for pineapple in many languages.

Pineapple contains a proteolytic enzyme bromelain, which digests food by breaking down protein. Pineapple juice can thus be used as a marinade and tenderizer for meat. The enzymes in pineapples can interfere with the preparation of some foods, such as jelly or other gelatin-based desserts. Some have claimed that pineapple has benefits for some intestinal disorders while others claim that it helps to induce childbirth when a baby is overdue. It can also be used in savory dishes to enhance digestion.

Bruce Lipton - Biology of Perception

While even the most prestigeous scientific publications still state how the nucleus is 'control center of the cell' or the 'brain center of the cell', it was scientifically proven that removing of the nucleus from the cell (taking away all the genes from the cell) did not in any way alter the behavior of the cell. Instead, it was still moving around and did all of the functions every cell does.

We all agree that every other living creature (or human being) cannot survive with its brain removed, the cell, on the other hand - was still living for two months.

That's the best proof how the nucleus cannot be the brain of the cell and the genes do not control biology.

Carob - Banana Hot "Cocoa"

As a treat, this is simple and delicious - best for Hunters, craving something sweet.

Ingredients:


  • 1 heaping teaspoon carob powder
  • 1 ripe banana
  • 8 oz. water
  • 1/2 to 1 teaspoon blackstrap molasses (optional)

Blend the ingredients until smooth, heat (stirring) until hot and enjoy this creamy treat. Without blackstrap molasses it tastes quite fruity, with blackstrap molasses it tastes more chocolaty. You can play around with this basic recipe, adding more carob, more water or another sweetener from the list of your superfoods.
